Paximadi Co. offers Fillo pastries, stuffed vegetables, and Biscotti wholesale. We place a strong importance on the consistency and quality of our products.
The company was started in our home, and yet, through the growth we have taken on the challenge of keeping our products fresh and flavorful.
We keep a basic line of products with an occasional addition of a new one. We desire to offer well thought out products to fit the theme of Greek flavors.
Our approach is to offer fewer products and to service more frequently, for the purpose of freshness and nutritional value.
A note from the founder: As early as I can remember, I am reminded of the tantalizing smells of my mother's oven. My friends and I were perpetually searching for new spots around Athens, where we could taste good wholesome foods and pastries away from the run of the mill. Always in my ear was my mother's voice, questioning, "what kinds of oils or butters are they using?! Things like that are what I missed right away as I moved to the West and had to compensate by learning to resemble those tastes over years of practice. With these experiences I wanted to offer some of the Greek flavors that I love, for the wider public in the Northwest.

The story behind the name "Paximadi"
The name Paximadi comes from a famous baker in ancient Greece named Paximos. He was known for his sweet breads. By accident, one time, he baked a batch twice, and after tasting it, he realized he had created a whole new concept of baking--the double baking. He found it was good for dipping and also prolonged freshness and flavor.
Tradition has it, that from this incident, the double baked bread slices and sweet bread slices became known as "Paximadi" throughout ancient Greece, and to this very day.
